Hi Abby! Great to hear from you. Thanks for sharing the blog with friends and family. Did you use plain yogurt? That's a great idea! (The mayo can be a little heavy.) Hope you're doing well!

Hey Betsy! Abby here, from the library at EHS. I looked up your blog to share with a friend who is looking for gluten-free recipes for her young son, and came across the recipe for Tomato Pie. "Tomato Pie" happens to be my cousin's nickname for my 9-month-old son (he has a cute onesie with a big tomato on the front!), so I sent her the recipe via Facebook, which my mother saw, and promptly decided she needed to make your recipe. Instead of a cup of mayo, she used non-fat yogurt, and she reports it turned out wonderfully! I told her she now has to make it for us when she visits next weekend. So thank you, in a very roundabout way, for the tomato pie in my near future!! :)

YUM. I'm eating lots of delicious tomatoes from my Dad's garden while I'm home. I'm loving gaspacho with all garden ingredients! Also, today my Dad made mozzarella cheese with dried herbs (from the garden) and stacked it between yellow and red tomatoes with fresh basil on top. Divine.

Whether they are nestled in a grilled cheese, folded into an omelette, or poised and ready to be eaten like an apple, I LOVE 'maters. I had never heard of "tomato pie" before, but WOW, that looks amazing...happy cooking, friend!
